Hokey Pokey from New Zealand is a light and airy candy with toffee flavors. It’s also known as Honeycomb due to the open structure resembling a bee’s hive. This is the second recipe I’m sharing for our Red, White and Blue tea party in celebration of the Olympics for Summer Games Week. I selected countries that had Red, White and Blue in their flags. I mentioned in the first Summer Games Week post that we have a local Olympian. Just a bit more history before the reveal on Friday. My kids were year round swimmers from the age of six until just recently when they retired from the sport as they are finishing up college. We were lucky enough to live in an area with some amazing swimmers, and have been on both USA swim teams and our local high school teams with some of these incredible individuals. In some ways that made my kids experience more challenging; having such fast swimmers to compete with every day. It also allowed for experiences that they may not have been able to do without those amazing swimmers. There were at least eight individuals from my kids USA swim team that qualified for Olympic Trials this year. It was so much fun to watch the trials and see the kids (now adults) that my kids have swam with for so many years. And to have one of our local swimmers qualify was so exciting! Hokey Pokey Recipe
The candy sets up quickly. This is what it looked like moments after I poured it into the pan. Be sure to work quickly!

Hokey Pokey from New Zealand is a light and airy candy with toffee flavors. It’s also known as Honeycomb due to the open structure resembling a bee’s hive.

Ingredients
- 5 Tbsp. granulated sugar
- 2 Tbsp. Golden Syrup
- 1 tsp. baking soda
Instructions
Line a 9×9 pan with parchment paper.
Place granulated sugar and Golden Syrup into a heavy-based saucepan. On medium heat, stirring constantly with a silicone spatula, until the sugar dissolves. Be careful not to let the sugar burn.
Increase the heat and bring to the boil. Boil for two minutes. Stir as necessary to prevent burning, I stirred constantly. Remove from heat. Add the baking soda and stir in quickly as the mixture will bubble and rise up quickly.
Pour into prepared pan immediately. It will start to set right away. Leave until cold and set then break into pieces.
Coat hokey pokey pieces in melted chocolate for an extra special treat!

Swimming was a wonderful part of our life for such a long time, I truly miss it. I hope your kids and your family enjoy the experience as much as we did.

Love hokey pokey candy! We had some in New Zealand when we visited last year (just before everything was shut down) and it’s so delicious! I have two young swimmers (7 and 10) so I love hearing about your family’s experience with swimming and know what you mean about them being pushed by those around them. It’s really an incredible thing.
